Some quick yummy bites for evening hunger.... or even during fasts (without garlic though)!
You will need:
Sabudana /Tapioca - 1/2 cup
Potatoes - 1 large
Garlic - 3 flakes
corinader leaves - 3tbsp chopped
salt - to taste
green chillies - 1 chopped finely
cumin seeds - 1 tsp
Oil - to deep fry
Boil potatoes, peel skin and keep aside.
Wash sabudana with water and soak in just enough water covering the layer of sabudana. You may add some more water if required later. leave for 1 hr (or more if req)till they blow in size and turn soft . There shouldnt be any water left once its done.
Mash potatoes, add cumin seeds, garlic, salt, green chillies, coriander leaves and peanuts. Mix well. Add the sabudana and mix.
Roll into lemon size balls and flatten it between your palm.
Deep fry in oil. Serve with sweetened yogurt or green chutney or just by itself!
